RV Cooking One Pot Roast for a Week of Meals

Cooking in an RV kitchen is like cooking in a sticks-and-bricks home, but it is smaller and has limited counter space and storage. Eating at home is not only healthier but also budget-friendly. As workampers, we love coming home and having a plan for quick and simple meals on work days.

My number one tip for cooking in your RV is to cook what you enjoy if you live full-time, a weekend warrior, or spend as much time RVing as possible. Find a few of your favorite meals and keep them in rotation.

While I’m not big on traditional pot roasts with all the vegetables, I love a Mississippi Pot Roast that I can use to make several meals. I make my Mississippi Pot Roast in a crock pot, cast iron skillet, or an InstaPot. Use whatever you keep on hand in your RV. I make this often, and on any given day, I have at least 3-5 packets of ranch and au jus on hand, and we always have a jar of pepperoncini peppers in the refrigerator and the pantry.

INGREDIENTS: Mississippi Pot Roast

You have likely made a pot roast, if not a Mississippi pot roast. You can make this with potatoes and vegetables just like a regular pot roast, but I do not. I make this simple just for the meat to make quick and yummy meals. Any beef roast will work. I try to find a bigger one for more meals, but I have also used pork, and it’s just as good.

  • Beef chuck roast
  • One stick of butter
  • One packet of au jus seasoning
  • One packet of ranch seasoning
  • Pepperoncini peppers (5-7; I double this)
  • 1/4 cup pepperoncini pepper juice

The basic assembly is to put your roast in your pot of choice and assemble it as listed above. If you’re using an Instantpot and need instructions, here is a link by Eating on a Dime.

Once the roast is done, I like to break some into chunks and shred the rest. I turn the pot back on for the juice. Remove any juice if there is a lot, and add pepperoncini juice to make a nice spicy au jus. Add to a large glass jar and refrigerate. When you remove it cold, you can remove the top layer of fat if wanted or shake it up and keep it in.

MEAL ONE: Pot Roast Night

Now that your RV smells amazing, you are ready to eat this deliciousness now. So eat and keep it simple. We do night one simply over rice or instant mashed potatoes.

MEAL TWO: Spicey French Dips

Spicey French Dip sandwiches take less than 15 minutes to prepare with leftover pot roast.

  • Leftover pot roast
  • Au jus leftovers
  • Hamburger buns or rolls
  • Cheese (optional)
  • Butter

This is definitely one of our favorite meals with lots of options. This is the perfect way to use up those extra hamburger buns! We love the Keto Culture Hamburger Buns and can always find them in our travels at Walmart. Hogie rolls also work well. Toast your buns for a minute in the oven or toaster oven, and add a tad of butter. Heat up your chuck of roast meat and add juice (enough for serving on the side). Heat up in the microwave or stovetop. Using a slotted spoon, add meat to your toasted bun or roll; add cheese if you like. Provolone or hot pepper works well. If you add cheese, pop it back in your toaster or oven for a minute to melt cheese. Add bun top and serve with the juice on the side. These are fantastic alone; add chips on the side or whatever side dish you have on hand.

MEAL THREE: Taco Night

This pot roast makes the best machaca tacos!

  • Leftover pot roast
  • Onions
  • Peppers
  • Tomatoes
  • Tortillas
  • Hot sauce
  • Cheese

Keeping with our theme of simple use of what you have on hand. I love using our Blackstone griddle to grill the rest of your leftover shredded roast meat with onions, peppers, and tomatoes. You will use this for tonight and can use anything left over for one more meal. Whatever you have on hand, however, you like, your tacos. Serve on corn or flour tortillas with cheese, onions, and your favorite hot sauce.

MEAL FOUR: Breakfast for Dinner

You can make breakfast or breakfast for dinner, one of my favorite meals.

  • Leftover machaca (pot roast)
  • Eggs
  • Veggies
  • Cheese
  • Salsa

Using the leftover machaca meat you grilled up, make breakfast! Using fresh eggs, make an omelet with your favorite cheese, green onions, mushrooms, or whatever you have on hand. If you’re not into omelets, no worries; make breakfast tacos! Add fresh eggs, cheese, and salsa, and put your meat into a tortilla, and enjoy!
